"There are no short-cuts to making the béarnaise that accompanies the entrecôte. Pommes allumettes are hand peeled, cut to regulation 7mm thickness, blanched and cooked to order. French fillet steak is used for the steak taratre. (Alain) Lhermitte insists on beating the sauce for each steak tartare himself. He also drives his refrigerated van to France for a weekly shop."
